  1. Preheat oven to 350 degrees F.
  2. Lightly grease or spray with non-stick baking spray a 9x13 inch baking pan. Press cookie dough into the pan bottom.
  3. Bake in the pre-heated oven for 8 -10 minutes, or until it is lightly browned.
  4. Cool the crust.
  5. In a large bowl, beat the cream cheese with 1/2 cup sugar and vanilla until light.
  6. Spread on cooled crust.
  7. Sprinkle light layer of coconut over cream cheese.
  8. Arrange desired fruit on top of filling.
  9. Chill and serve.
