This meal starts out in a crock pot to get the meat nice and tender but gets transferred into a large stew pot to hold all the ingredients.
Crack a cold one. It's about to get warm.
Serves about 8 - 10 hungry divers.

  1. Cut stew meat into small chunks and add to crock pot with onions and two tablespoons of water.
  2. Cook in crock pot until meat falls apart. Add more liquid (water, stock, beer, or wine) as necessary. Stir occasionally towards the end to help it along. This takes about 3 to 4 hours.
  3. Transfer to large pot and add remainder of ingredients and let simmer for no less than 3 hours. The longer the better. Add more liquid (water, stock, beer, or wine) as necessary.
  4. Feel free to add or substitute other types of peppers and tomato products. It all goes together well.
